How do I keep my sponge cake moist for longer?
Lots of you have contacted us to find out how to keep a sponge cake moist for longer. With cake decorating projects, it is often necessary to bake the cakes a few days before the actual event to allow you enough time to decorate.
Sponge cakes will generally remain fresh for around 5 to 7 days (though in our experience, cake isn’t normally left around long enough to find out!). By baking the cake a few days before the event, you’re already ‘eating’ into the length of the life of the cake.
One trick to keep your cakes moist for a bit longer is to glaze them. Glazes are a great way to add extra moisture and / or a bit of extra flavour to a cake without having to add it during the baking process. Once your cake is baked, you can drizzle or brush a glaze on to the top of the cake or on the inside when you’ve sliced your layers.
How to make a simple glaze:
1 cup caster sugar
1/2 cup water
Vanilla Extract
Add the caster sugar and the water to a saucepan and slowly stir over a gentle heat until the sugar is dissolved. Once the sugar is dissolved, stop stirring and simmer gently for around 5 minutes then remove from the heat. After the liquid has cooled down a bit, add a few drops of vanilla extract.
You can also add lemon juice to make a lemon flavoured glaze – or experiment with different flavours and see what you can come up with!
